Research Interests:
  • Chemistry, nutrition and processing technology of milk and dairy products.
  • Development and quality evaluation of dairy goat products including fluid milk, cheese, yogurt, ice cream, cosmetics and other value-added products, in relation to chemical, nutritional, microbiological, rheological, hypoallergenic and sensory properties.

Research Accomplishments:

Seasonality of milk production is the most challenging problem for the year-round uniform supply of dairy goat products to consumers, which inhibits the growth, profitability and sustainability of the dairy goat industry in Georgia and across the US. The research has been conducted in Dr. Park's laboratory to overcome the inherent problem of goat milk production through an innovative technological approach to processing the surplus goat milk produced during the peak season, and then market the products during the off-season. Although freezing cheese is not a common industrial practice, we investigated the feasibility of frozen-storage of goat milk cheeses for later marketing. The results showed that the food quality of frozen-stored cheeses could be preserved for 6 months without significant nutritional, sensory and rheological changes. This is a breakthrough and important research finding, which can enhance the economic sustainability of dairy goat farmers as well as their dairy goat industry. Park and his research group obtained Grade A dairy plant license and also developed sellable goat milk Monterey Jack cheese. Development of other dairy goat products has been under way in Park's dairy technology laboratories of the Georgia Small Ruminant Research & Extension Center, at the FVSU.

Future Research Interests:

  • Development and quality evaluation of reduced-fat dairy goat products such as cheese, yogurt and ice cream
  • Development of cholesterol reduced dairy goat products
  • Development of goat milk infant formula
  • Investigation of hypoallergenic and anti-cancer effects of goat milk fat (short and medium chain fatty acids) as well as bioactive peptides of caprine milk
